Ale­jan­dra’s Alfa­jores de Maizena from the DOMO BACK

There’s a pleasant aroma of Argentinian biscuits in the RIKA showroom – Alfajores de Maizena. This is because Alejandra Cortez Lede from the export internal sales team is baking her personal favourite biscuits in the DOMO BACK. Find out how we made the biscuits in the following recipe:

Ingre­di­ents & method

For the Alfajores de Maizena, you need:

210 g butter/margarine
150 g sugar
3 egg yolks
Zest of 1 lemon (grated)
2 tbsp rum
1 tbsp vanilla extract
210 g plain flour (fine)
250 g cornflour (Maizena)
1/2 tsp bicarbonate of soda
2 tsp baking powder

Dulce de leche
Coconut flakes

Mix the butter/margarine and the sugar, add three egg yolks and continue beating. Add the rum with the vanilla extract and lemon zest. Mix together the cornflour, flour, bicarbonate of soda and baking powder. Knead the dough with your hands and roll it out to a thickness of around 5 mm. Then, cut out the shapes using a round biscuit cutter.

Activate baking mode via the RIKA DOMO BACK’s intuitive touch display, and set the temperature to 180 degrees. The light within the oven is switched on. You can display the current temperature of the baking compartment by tapping the “Information” symbol on the left of the touchscreen display under “Entry”. Or you can simply activate baking mode via your smartphone with RIKA FIRENET. You can also set the temperature via the user-friendly app.

Place the Alfajores de Maizena on the baking tray lined with greaseproof paper. Slide the lined baking tray into the RIKA DOMO BACK. Ideally, you can watch the flames at work for 5 to 10 minutes and enjoy the sight of the Alfajores de Maizena baking away. The finished biscuits should still be very pale.

Once the Alfajores de Maizena have cooled, spread dulce de leche on them and stick each two biscuits together. Then, press the biscuits together so that a little dulce de leche comes out from between the biscuits. Roll the edge of the biscuits in coconut flakes. Alejandra’s Alfajores de Maizena are ready.
